I have been using these knives for about 15 years. They are so good I give them out to my hunting and fishing friends as gifts. The stainless steel blade stays sharp for a long time. I sharpen them with a diamond "stone". The slightly flexible knives will fillet many fish without the need to resharpen. To fillet catfish, I chill them first and then fillet. I also use this exclusively to de-bone and process the venison and wild game I shoot each year. My wife uses them in the kitchen because they are always sharp.
