The course/extra course is often needed the first time you sharpen a chisel or plane, especially if you have never lapped the back. Don't try to skip the first step by starting with the fine/extra fine stone, it just wastes a great deal of time. Both stones work as a team and will not disappoint. I finish with a very fine ceramic stone that leaves a razor finish. I love the extra coarse grit for quick reshaping. I enjoy the large size for larger blades and to allow longer (=fewer) strokes. Diamond stones mean no messing with oil/water. Some advice, if you are planing to sharpen a lot of tools, I'd get the stones that are fine or extra fine on one side, and coarse and extra coarse on the other.
