I've been a professional chef for 18 years and have used the Lansky sharpeners even prior to that. I find that they are a great way to keep my knives razor sharp and the guides keep the edge at the exact angle needed to keep your knives in great shape. The only drawback I have found is that the plastic encasing the stones can sometimes crack from constant tightening of the screw. The new diamond hones are working great.

It can't clamp everything, but it does put an awesome edge on even the dullest blade, no matter how chipped and worn it was when I started!
